Pasta – Homemade

This is a super fun, hands-on recipe to make with your kids.

It beats dried pasta from the supermarket hands-down in both taste and nutrition.

It’s made it’s way into our weekly dinner rotation. We hope you love it too!

INGREDIENTS:
Flour (plain) – 2 cups
Eggs – 3
Salt – ½ teaspoon
Olive Oil – ½ tablespoon
Pasta Sauce (or Passata & Herbs)

  DIRECTIONS:

  1. Put all ingredients in a food processor (use the kneading blade if you have one). Alternatively you can mix by hand. 
  2. Mix until it comes together to form a loose ball.
     
  3. Take out and hand knead for 5 minutes until smooth. Use flour to stop it sticking to the bench.
     
  4. Put in a bowl and cover. Leave at room temperature for 30 min.
     
  5. Divide dough into 4 sections. Take one section and flatten, coat with flour. Feed this through the pasta machine on the widest setting. Coat with flour and feed through again on a thinner setting. And again until you are happy with the thickness.
     
  6. Now feed through the pasta cutter (I find fettuccine easier to deal with compared to super thin spaghetti pasta strands). The secret is to make sure you have plenty of flour on the dough to prevent it from sticking. Hang on the pasta airer while you make the remaining pasta.
     
  7. Get a big pot of water on the stove at boiling point and add the homemade pasta.
  8. Cook until done and top with heated pasta sauce!

Tip: If there is any dough stuck to the bench at the end an easy way to get it off is to soak the stuck dough in a bit of water, then a few minutes later it should wipe off easily.
